  2. Next, in the same pot, sauté the onion, garlic, carrots, celery, and potato for about 5 minutes, or until softened.
  3. Afterward, add the chicken back into the pot along with the chicken stock, thyme, bay leaf, salt, and pepper.
  4. Bring everything to a boil, then reduce to a simmer and cook for 30 minutes, or until the vegetables are tender.
  5. Once done, remove the bay leaf, adjust the seasoning, and garnish with fresh parsley before serving.

2. Classic Cottage Pie

When it’s cold outside, nothing quite beats the hearty, filling nature of cottage pie. This dish, with tender minced meat (or lentils for a vegetarian version) and a creamy mashed potato topping, is sure to warm you from the inside out.

  • 1 onion, chopped
  • 2 carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 500g potatoes, peeled and chopped
  • 50g butter
  • 100ml milk
  • Salt and pepper, to taste

Instructions:

  1. To start, boil the potatoes in salted water until soft (around 15-20 minutes). Drain and mash with butter and milk, seasoning with salt and pepper. Set aside.
  2. Meanwhile, cook the minced beef in a pan until browned. Add the onion, carrots, and garlic, cooking for another 5 minutes until softened.
  3. Then, stir in the tomato paste, Worcestershire sauce, and peas. Season with salt and pepper, and simmer for 10 minutes.
  4. Preheat the oven to 180°C (160°C fan). Transfer the meat mixture to a baking dish and spread the mashed potatoes over the top.
  5. Finally, bake for 20 minutes until the top is golden brown. Serve with steamed vegetables or a simple salad.

3. One-Pan Roasted Root Vegetables

  • 2 parsnips, peeled and cut into chunks
  • 1 red onion, quartered

  3. Spread the vegetables out on a baking tray in a single layer.
  4. Roast in the oven for 30-40 minutes, stirring halfway through, until the vegetables are tender and golden brown.
  5. To finish, drizzle with honey for a touch of sweetness (optional), and serve warm as a side dish or with a main meal.

4. Creamy Tomato and Basil Pasta

  • 100ml double cream

  3. Next, stir in the chopped tomatoes, basil, salt, and pepper. Let the sauce simmer for 10 minutes to thicken.
  4. Reduce the heat and stir in the double cream, cooking for a further 2-3 minutes, until the sauce is creamy and heated through.
